Symbolic Kyoto Ramen! Chashu-men!

Introduce

It is a ramen noodle shop call masutani.

Come to think of it, Kyoto Ramen was once known as “Kyoto Ramen” when it first became known throughout Japan.

I decided to visit this symbolic restaurant.
This is my third visit in over ten years.

The location was about a 20-minute walk from Demachiyanagi Station on the train.

The store is marked by a red tent along the irrigation canal.


The name of the restaurant was partially hidden by a mature tree, which reminded me of the passage of time.

The inside of the restaurant is long and narrow, just as it was in the past,
In the kitchen, dishes are still being washed by hand.


Seating is at the red L-counter in the front and a small table in the back.

The name of the restaurant is “Chuka-soba”, but there are only three kinds of noodles on the menu

I decided to order the chashu ramen.

It took about 10 minutes to arrive at the restaurant.


The ramen looks like a royalty of the back fat soy sauce ramen that took the world by storm, with a lot of large green onions.

Remembering the old days, I sprinkled a dash of “ippiki” (a spice) on my bowl of ramen.
The first mouthful of the soup has a pork flavor from the fatty back fat on the surface.
But soon, a clear chicken broth emerges.


Last time I had this soup, I felt it was too thin for some reason, but this time, the soy sauce flavor and the richness of the broth were right on.


This time, however, the soy sauce flavor and the richness of the soup made me realize once again that it is a delicious soup.


The noodles are Kyoto Chinese noodle royal road, yellow, thin and straight.


The noodles are moderately mixed with the broth and are easy to eat.


The chashu noodle soup has a few thick slices of chashu pork.


It was a little spicy with soy sauce, but it was delicious.


The other ingredients were pickled bamboo shoots and green onions.
I don’t like too many, but this amount is just right for me.

Recently, ramen shops in Kyoto have become more and more diverse, which is good.
That’s fine.


When I want to eat Kyoto Ramen, this is the kind of restaurant that comes to mind.
