Introduction
I visited the main restaurant in about 2020 and remember being shocked at the amazing flavor of the noodles at the time.
It is a ramen noodle shop call takamatsu.
I also remember how groundbreaking it was to use onion,
which was not so common in restaurants that served tsukemen.
The interior of the restaurant is simple, with counter and table seating.
There is a ticket machine right at the entrance to issue a meal ticket.
After that, you hand the ticket to the waiter.
It was lunchtime, but we were able to enter the restaurant right away.
What I ordered was, of course, “Tsukemen.
At the time, I had the impression that chicken and seafood was quite rare.
I had often seen pork bone and seafood or seafood-only restaurants, but when I think about it again, I think the addition of chicken was also novel.
I think it must be quite difficult to combine meat and seafood.
The same is true for pork, but if the chicken is processed incorrectly, it will have an odor, and I think the technique used to keep it out is excellent.
The noodles are made of stone-ground whole wheat flour from Nagano Prefecture, and have a smooth texture like buckwheat noodles.
In a way I feel less guilty about eating them at night.
And I think the thinness is what really sets it apart.
The major types of noodles used in Tsukemen restaurants, including those at the time, were medium-thick noodles, thick noodles, and noodles for ramen noodles.
I remember how shocking it was to eat thin noodles in such a restaurant.
I also like the fact that they prepare “sudachi” (Japanese citrus fruit) to further enhance the flavor.
In summer, when you want a lighter taste, you can squeeze some “sudachi” to make the aroma even better and enjoy the dish to the end.
Takamatsu specializes in tsukemen (tsukemen), but also serves delicious ramen.
It is Japanese style, light, and has a gentle taste.
The ramen noodles are moderately sized, and if you order the large size, it is quite hearty.
The restaurant also offers a wide variety of side dishes, making it a very popular place to eat.
