Introduction
Two popular ramen stores in Enmachi are Yamazaki Menjiro and this one.
I was intrigued by the fact that they sell homemade chashu pork by weight.
An elderly person in the neighborhood comes to buy chashu pork.
In short, I wondered how it tasted, and I wondered if that was okay too.
There are some mixed-soba-like dishes for students and other rich dishes, but the basic menu is “chashu pork”.
There is also a mixed-soba type for students and a rich menu, but the basic menu is “Onibara,” a light chicken-based dish made with genuine Nagoya Cochin.
The basic menu is a simple chicken-based dish made with genuine Nagoya Cochin called “Onibara”.
You can choose either white or black, and white is the frame for combining the Nagoya Cochin soup with light soy sauce.
The white ramen is a chicken-based soy sauce ramen that combines Nagoya Cochin soup with light soy sauce.
Black is made with re-finished soy sauce and bonito flakes.
My personal preference was the latter, but if you are using genuine Nagoya Cochin,
I chose white because I thought that if they were using genuine Nagoya Cochin, they must know how to make a good soup stock.
Genuine Nagoya Cochin” means that the chicken is distributed as a high-class local chicken.
I thought that “genuine Nagoya Cochin” was just a story that Nagoya Cochin is distributed as a high quality local chicken and only a few of them can actually call themselves Nagoya Cochin.
If so, I think the soup is a chicken soup with sharp, clean contours and a deep flavor.
I think it is a chicken soup. The soy sauce has an aroma, sweetness, and sourness, and the large amount of raw chopped onion is a neutralizing agent. I think this is also possible.
Teigaku’s flat noodles. It is very much there, and the chashu pork is, well, quite good, even for a ramen restaurant.
I have the impression that this is an aggressive ramen that doesn’t settle for small and doesn’t think ahead. In that sense, I metaphorically called it a manly ramen.
The female waitress’s friendly service, the cooking, and all the other aspects of the ramen I think this is a ramen that will continue to be appreciated in the future.
