Introduction
I was walking home late at night and saw that the lights were on, so I decided to go in since I was feeling a little hungry.
Most of the menu items were over 1,000 yen. I wonder if that’s because of all the toppings or the late-night surcharge.
On the table, there was red ginger, grated garlic, sesame seeds, and later they brought me some takana (pickled mustard greens), so it was a tonkotsu ramen type. The soup wasn’t too hot, which was nice when I was in a hurry.
The char siu was tender and delicious, and the soup had a pinkish hue that made it even more enjoyable.
The soup was a white, cloudy pork bone broth with a subtle yet rich and creamy flavor, enhanced by a well-balanced soy sauce seasoning and thick back fat.
The noodles are straight, thin, and have a high water content, making them smooth and easy to eat, with a good bite and the soup clinging to them.
The char siu is made from braised pork, preserving the flavor and umami of the meat, and pairs well with the rich soup.
