Introduce

New Nishijin Specialty “Kelp and Noodles Kiichi

Come to Nishijin Good and This Guy!

We visited the Nishijin specialty “GOTSUJI NO KONBU” in April 2023 to learn that they have opened a restaurant specializing in KONBU RAMEN!

The store is located on the second floor of “GOTSUJI NO KONBU” on the corner of SENBON GOTSUJI, and is open by reservation only.

When you go up to the second floor, you will see a stylish space with a magnificent one-paneled wooden counter! This is a surprise!

Then, as only a kelp specialty store can do, the presentation of kelp begins.

You will learn about the aroma of kelp and compare kelp water for dashi (soup stock).

Rishiri kelp, Makonobu kelp, and Rausu kelp have slightly different strengths and balances of umami, which is very interesting!

Next, we learn the difference between oboro kelp and tororo kelp, and have some freshly shaved oboro kelp.

The strong-tasting kelp is a great accompaniment to sake as it is. Freshly shaved kelp melts smoothly in the mouth.


Then comes the main dish, kelp ramen.

The soup is made from kelp soup stock made from water, without using pork, soy sauce, or chicken, but only kelp, water, and salt adjustment!

For the Kaeshi, we use ingredients that bring out the flavor of the kelp, such as three kinds of kelp, perilla, Ururame, mackerel, dried fruits, dried tomatoes, and tea leaves.

The delicate flavor is adjusted by shaving the kelp and timing the broth.

The only thing that makes this ramen refreshing is the inclusion of deep-fried tofu, which makes it more like udon than ramen.

The yuzu peel makes it even more crisp and fragrant.


In the latter half of the dish, freshly shaved oboro kombu (kelp) is added to the ramen to “change the flavor” of the ramen!

By the way, you can refill your bowl of kelp with any amount of kelp.

Not only the ramen, but also kombu musubi and matsutake kombu cooked in kombu broth, and “marukon,” a kombu snack, are served with the ramen.
